Mussels used to intimidate me, and I don’t know why. They cook up in 5-7 minutes, so you can get dinner on the table in no time at all. Most of the mussels you get at big grocery stores are already debearded for you, so cleaning them isn’t even that hard. Plus, they’re an excellent source of protein, iron, and omega-3 fatty acids.
